Fresh vs. Dried

When it comes to using fresh herbs instead of dried, there is little room for comparison. There's nothing like the natural flavor, beautiful color and texture, and delicious scent fresh herbs add to any dish. Not only do they appeal to the senses, they're simply healthier. Herbs lose their essential oils and many nutrients in the drying process.

In general, when substituting fresh herbs for dried, use three times the amount called for. Unlike dried herbs, fresh herbs should be added toward the end of cooking to preserve their flavor.
